You are definitely the king at quote finding and fine DJ skills...  can&#039;t wait to see how this comes out either...  timing will be quick/last minute, but if you&#039;re interested in tasting the &quot;free-run&quot; after fermentation, we could have you over.  I did this at Crushpad and it was an interesting flavor and feel...  kind of ceremonial, but then you can also see if it tastes where you want to go with it and make adjustments in the next stage or during aging.</description>
